North Carolina Style Pulled Pork

Ingredients

  • 2 lb pork shoulder roast
  • 3 garlic cloves
  • salt & pepper
  • 1/2 cup ketchup
  • 1/2 cup brown sugar
  • 1/3 cup red wine vinegar

Instructions

  1. Preheat the slow cooker

  2. Cut garlic cloves into thin slices, insert at random intervals into the pork roast using a knife to poke the holes.

  3. Season the roast with salt and pepper, place into the heated slow cooker.

  4. Mix remaining ingredients, pour over roast in slow cooker.

  5. Cook on low for 8 hours. Then remove roast, cut into several pieces, and shred the meat.

  6. Return the shredded meat to the slow cooker and cook for another 1 hour.
