Grilled Veggie Skewers

Ingredients

  • 2 ears of corn, husks removed
  • 2 onions
  • 1 zucchini
  • 1 green or red bell pepper, seeded & cored
  • 2 tbsp olive oil
  • 1/4 cup chopped fresh basil leaves
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper

Instructions

  1. Preheat the grill to medium heat (350 - 450 degrees)

  2. Cut the vegetables into chunks or slices. Thread them onto the skewers, alternating vegetables. Brush vegetables with the olive oil and sprinkle with basil, salt, & pepper.

  3. Grill until tender and slightly charred, turning and basting occasionally with olive oil.
