Cuban Pulled Pork Instant Pot

Ingredients

  • 5 lbs pork shoulder
  • 10 cloves garlic
  • 3 tsp salt
  • 3 tsp black pepper
  • 2 tsp cumin
  • 2 tbsp dried oregano
  • 1/2 cup cider vinegar
  • 4 tbsp lime juice (juice of 6 limes)
  • 1 cup water

Instructions

  1. Chop 6 cloves of garlic for the marinade. Sliver 4 cloves of garlic. Using a sharp knife, make random cuts into the pork roast and insert a sliver of garlic in each hole. 

  2. Place the pork roast in a large zip lock bag, in a large bowl, with all ingredients except water. Place in refrigerator and marinate 2-24 hours, turning occasionally for maximum flavor.

  3. Place the water and marinated pork in the Instant Pot. Close lid and set valve to sealing. Set pressure cooking timer to 90 minutes. When time is up, allow a natural pressure release, about 20 minutes. 

  4. Remove pork from instant pot and shred with two forks. Add some liquid from the Instant Pot to the pork and serve.
