Preheat oven to 375 degrees
Melt butter in a sauté pan over medium heat. Add cinnamon & apples, cook for 2-3 minutes. Add apple juice & simmer about 5 more minutes, until apples have softened. Remove apples to a 13" X 9" baking dish, reserving 2 tbsp of the drippings.
Melt stick of butter in medium saucepan. Add flour & whisk to form a paste. Then add apple juice, brown sugar, granulated sugar, & the drippings from the apple filling. Stir & bring to a simmer, cooking about 3-4 minutes until it forms a dark brown sauce thick enough to coat the back of a spoon.
Cut biscuits into quarters & roll them into little balls. Combine with cinnamon & sugar, coating them evenly.
Drop the biscuit balls onto the apple filling in the baking dish. Pour the caramel sauce on top, lightly stirring to mix. Bake 20-25 minutes until the biscuits have baked to a puffy golden brown.
