Turkey Burgers with Pickled Onions & Guacamole
This yummy recipe is from La Tortilla Factory. I made a few minor changes for my dinner, such as using store bought guacamole and shredded cabbage instead of sprouts, but I think my result was not too different and just as tasty!
Note – this is one of those recipes that you have to start at least an hour early.
The Turkey Burgers with Pickled Onions and Guacamole recipe from La Tortilla Factory was included in the January 2019 Degusta Box, along with a package of La Tortilla Factory Low Carb Flour Tortillas.
I made the pickled onions first so they had ample time to marinate. This was so easy – just mix together the red wine vinegar, sugar, and salt. Thinly slice the onions and add to the vinegar mixture. You can make these pickled onions up to 3 days ahead (and keep in the refrigerator) if you are more organized than I am!
I used a shallow dish to allow the vinegar mix to cover more of the onions. A ziplock bag would also work very well for marinating. These can sit out on the counter for the hour of marinating time.
Next step was making the turkey burgers. The recipe calls for 3 pounds of ground turkey but I only used 1 pound for the two of us. However, you could easily use all 3 pounds of turkey the recipe calls for and then freeze the extra burgers for a future meal. I used one egg, ground garlic salt, and ground fresh pepper to taste for my 1 pound of ground turkey.
Cover and refrigerate the turkey burgers (to firm them up) for an hour or up to overnight before cooking.
After my onions are done marinating and my turkey burgers are firmed up, we are ready to cook! When your turkey burgers are cooked you can top them with your cheese slices, cover and cook for another 15 seconds-ish, so the cheese gets all soft and gooey.
These turkey burgers are perfect on a flour tortilla! Top with the picked onions, sprouts (or cabbage), and guacamole.
Fold up a warm tortilla so that it forms an envelope to keep everything inside, give it a few shots of hot sauce, and dinner is served!
Turkey Burgers with Pickled Onions and Guacamole
Ingredients
- 1/2 cup red wine vinegar
- 1 tsp sugar
- 1 tsp salt or more to taste
- 1 small red onion thinly sliced
- 3 lbs ground turkey
- 2 large eggs
- black pepper to taste
- 1 avocado pitted
- 1/4 tsp ground cumin
- 1/8 tsp ancho chili powder
- 1 garlic clove minced
- 2 limes divided
- 1 tomato diced
- canola oil
- 1 pkg Non-GMO Low Carb Flour Tortillas
- 2 cups sprouts
- 8 slices pepper jack cheese
- hot sauce for serving
Instructions

Combine first 3 ingredients in a small bowl, stirring to dissolve salt and sugar. Stir in onion. Let stand at room temperature for at least 1 hour, stirring occasionally, or refrigerate up to 3 days.

Combine turkey, eggs, salt, and pepper to taste in a large bowl. Form into 8 (4 inch) patties. Place on a plate or small tray, cover and refrigerate at least one hour and up to overnight.

Combine avocado, cumin, ancho chile powder, garlic, and salt and pepper to taste in a medium bowl, gently mashing with a fork. Stir in juice of 1 lime. Fold in tomato. Cover with plastic wrap, pressing it into the surface of the guacamole to prevent browning, and refrigerate. Preheat grill to medium-high. Oil grill.

Brush patties with oil and place on grill. Cover and cook 8-10 minutes or until done, turning once. Top each patty with 1 slice of cheese. Cover and cook 15 seconds or until cheese starts to melt. Transfer burgers to a plate and keep warm.

Warm tortillas on grill. Lay tortillas on a work surface. Lay 1 burger on top half of tortilla (at the 12 o'clock position). Top each burger with pickled onions, sprouts and guacamole. Drizzle with hot sauce. Fold the bottom half of the tortilla up to cover the burger, then lift to fold the sides under the burger to form an envelope. Cut remaining lime into 8 wedges. Serve burgers with lime wedges.
this looks different I would give it a try ive never heard of pickled onions before though
Some of my friends eat turkey burgers a lot. So I tried them . They are okay depends on what toppings you might add to them. Don’t care for this recipe because I hate the taste of wine in any of my food also no hot sauce for me either, stomach says no no to that one.

I am not a fan of ground turkey. However that looks REALLY good!
