Summer Blackberry Cobbler
It is mid-summer, the days are hot, and blackberries are at their sweetest peak. Sarah took the grandkids berry picking this week and surprised us with a lovely box of plump and juicy blackberries. This blackberry cobbler recipe is so easy and tastes divine! Of course the recipe is not mine. Why reinvent the wheel (or cobbler) if The Pioneer Woman has it covered!

Summer Blackberry Cobbler
Ingredients
- 1 stick butter
- 1 1/4 cups sugar
- 1 cup self rising flour or add 1/2 tsp each baking powder & salt to plain flour
- 1 cup milk
- 2 cups blackberries fresh or frozen
Instructions

Preheat oven to 350 degrees. Rinse the blackberries & pat dry. Butter a baking dish – a deep dish pie dish works well.

Melt butter in the microwave.

Mix together one cup sugar & the flour in a mixing bowl. Whisk in the milk and mix well. Whisk in the butter, mixing well again.

Pour the batter into the buttered baking dish. Sprinkle blackberries over the top of the batter; distributing evenly. Sprinkle ¼ cup sugar over the top.

Bake for 1 hour, or until golden and bubbly. You can sprinkle an additional teaspoon of sugar over the cobbler 10 minutes before it’s done.

Let cool & serve with vanilla ice cream, of course!
