Shrimp Tacos with Briannas Cilantro Lime Salsa
We love trying out different taco recipes, especially in the summertime! Our June 2017 Degustabox contained both a bottle of Briannas Creamy Cilantro Lime dressing and the recipe for making these easy and oh-so-tasty tacos. After tasting the dressing (very yummy!) and reading the directions, I just had to give them a try!
Salsa Ingredients:
- 1 medium mango, peeled & sliced
- 2 tbsp. fresh jalapeno, chopped
- 1/3 cup red onion, chopped
- 1/4 cup fresh cilantro, chopped (I used frozen)
- 1 avocado, peeled & chopped
- 1/3 cup tomato, chopped
- Juice of 1/2 lime
- 1/3 – 1/2 cup Briannas Creamy Cilantro Lime dressing
Mix all ingredients together.
Marinate your shrimp in a zip lock bag to save clean up time.
Put shrimp in a hot pan and use tongs to turn them once.
If I hadn’t had the salsa ready, I might have just eaten these right out of the pan…
Taco Ingredients:
- 6 corn taco shells or corn tortillas
- 1 lb medium shrimp, shelled & deveined
- 1 cup Briannas Creamy Cilantro Lime dressing
- Cilantro Lime salsa
Marinate shrimp for 1 hour in 1 cup Briannas Creamy Cilantro Lime dressing.
Drain shrimp. If grilling, put on skewers and place on charcoal grill for 2 minutes each side or until pink. Or saute in a bit of olive oil on the stovetop for a couple of minutes until pink. (It was raining so I opted for cooking inside.)
Warm the taco shells in the oven or microwave. Add the shrimp to the salsa and fill your taco shells! Garnish with extra cilantro as desired.
These shrimp tacos were really delicious! My husband loved them too, and told me I could feel free to make them again any time. And then he ate every bit of the remaining salsa with tortilla chips!
These look delicious! We don’t eat shrimp too ofter, but this would make a great meal for a special occasion!
