I love to cook – and eat! – but carving the time out of my day to fix complex recipes is usually more of a hope than a reality. If I was really serious about cooking I would choose to put that task higher on my priority list. I really need a chef to come in and serve dinner every day. Since I guess that is not going to happen in this lifetime, I am always searching for dinners that taste wonderful but can be quickly prepared when I dash into the kitchen hoping for a miracle!
This easy and inexpensive recipe is one that we all love. It can be on the table in a timely manner, too. I first found it at ohsweetbasil.com and adapted it just a bit to suit. The recipe is also great in your crock pot! You can fix it in the morning and have it ready at dinnertime. Just dump all the ingredients in and turn on the slow cooker. If you are really prepared, cornbread goes well with this dish.
Instant Pot Potatoes, Bacon, & Green Beans Recipe
Ingredients
- 8 slices bacon cut into small pieces
- 1 large onion chopped
- 4 cloves garlic chopped
- 3 lb small red potatoes halved
- 2 lb frozen cut green beans
- 1 cup chicken broth
- 1 tbsp olive oil
- salt & pepper to taste
Instructions

Sauté the bacon until crisp using the sauté function on your Instant Pot or in a sauté pan on the stove. Remove bacon, set aside, and save 3-4 tbsp bacon grease.

Sauté the onions in the bacon grease until slightly browned, then add potatoes (cut side down) and brown slightly. Add olive oil if needed. Add garlic and continue cooking for a minute or two. Turn off the sauté function if using your Instant Pot.

Add the green beans and chicken broth. Mix it all together.

Set your manual high pressure setting to 10 minutes and cook. Allow a natural release, open the lid, and stir in the bacon. Add salt and pepper to taste.
Crock Pot Instructions

Place all ingredients in slow cooker. No need to sauté the bacon, potatoes or onions. Increase chicken broth to 2 cups. Cook for 4 hours on high or low for 6-8 hours.
