Pasta in Caramelized Onion & Garlic Sauce with Kielbasa
You don’t need to spend a lot of money on hard to find ingredients to make a meal that tastes wonderful, fills your tummy and makes you look like a great cook. This easy recipe made my kitchen smell wonderful all evening and I had lots of company as my hubby kept wandering in to see if it was done yet!
Ingredients:
- Angel Hair pasta, enough for 2 or 3 (I always have to guess and I like to overestimate so I can have leftovers)
- 1 onion, chopped
- 5 garlic cloves, minced
- ¼ cup olive oil, you can add more if needed
- 1 package of Kielbasa sausage, cut into bite size pieces
- Parmesan cheese for topping
Directions:
Cook the pasta in boiling salted water until done to your taste. I used whole wheat noodles (not my favorite but once in a while I try to do the “healthy” thing) and cooked it for 12 minutes.
While the pasta thing is going on, you can brown the Kielbasa and set it aside. You don’t have to do this as it is precooked, but I like that browned crispy goodness taste!
Heat the olive oil in a sauté pan, add the onion and cook it slowly so it does not burn, about 20-30 minutes.
When the onion is about ready, add the garlic and cook until it is soft and fragrant, being careful not to burn it. This only takes a few minutes. Garlic gets bitter when overdone.
Drain the pasta and add the olive oil with the onions and garlic to the pasta. Stir in the Kielbasa. Add salt and pepper to taste.
Top with some chives, then serve it up with Parmesan cheese to sprinkle on top. Add a green salad on the side and dive in! This was sooo good!! I am usually the pasta hog in our house, but I am going to have to fight it out with my husband for the leftovers this time!
