Korean-Style Seasoned Spinach
Traditional Korean meals are served with up to 12 small side dishes (Banchan) that are communally shared and go with any meal. This flavorful Korean-style spinach (sigeumchi namul) recipe is one of my favorites. It is simple to prepare and with a few ingredients you can give everyday spinach an authentic Korean flavor!
Korean-Style Seasoned Spinach
Ingredients
- 1 lb fresh spinach
- 2 tbsp sesame oil
- 1 tbsp soy sauce
- 1 tsp toasted white sesame seeds
- 1 tsp rice vinegar
- 1 tsp granulated sugar
- 1 clove garlic minced
Instructions

Blanche the spinach in a large pot of boiling water until bright green (less than a minute). Drain it in a colander and rinse in cold water or plunge into an ice bath to stop the cooking. Squeeze out the water and separate the clumps of spinach. Chop spinach if you prefer smaller pieces.

Add the rest of the ingredients to the spinach and mix well. The flavors are enhanced if you let the seasoned spinach marinate for at least 10 minutes.
