Instant Pot Ranch Potato Salad with Bacon
It is summer and we are homebound, as are many of you. This is not all bad when it comes to meals since I have the time to spend doing meal planning and cooking. Lately I have been pulling old recipes our of my recipe boxes (yes, I still use mine and they are FULL) and trying out delicious new ones too.
This Instant Pot Ranch Potato Salad with Bacon recipe is an updated oldie that that is still around after so many years – because it’s easy and it just tastes so good! Sure, you can boil the potatoes and eggs on the stove (separately) but using the Instant Pot means you can cook both together and not have to keep an eye on them while they are cooking. The potatoes will be a bit firmer if you use a steamer basket but the rack for your Instant Pot (what I use) works too.
I top mine with the sliced eggs only because that is what my mom used to do when I was a kid. You can just cut them up and put them into the salad if you prefer!

Instant Pot Ranch Potato Salad with Bacon
Ingredients
- 2 lbs red potatoes
- 2 eggs
- 1 1/2 cup water
- 1/2 cup diced celery
- 1/4 cup diced onion or more to taste
- 1/4 cup bacon bits
- 1 packet ranch dressing mix
- 1/2 cup mayonnaise
- 1/4 cup water
- dash paprika for garnish
Instructions

Peel and dice potatoes. Place on steamer basket or on rack in instant pot. Gently place eggs (still in shells) on top.

Add 1 1/2 cups water to the Instant Pot. Lock the lid, set the pressure to cook on high for 4 minutes. When time is up, do a quick pressure release.

Place the eggs in cold water to cool. Set the potatoes in a bowl and cool separately.

Whisk together the ranch dressing mix, mayonnaise, and water.

When potatoes are cold, add the onions, celery, and bacon bits. You can add chopped up egg to the mixture or save them to place on top.

Mix the ranch dressing into the rest of the ingredients. Top with sliced egg and a pinch of paprika.

Chill together for at least an hour to let the flavors blend together.
