Instant Pot Cuban Pulled Pork
Having a pot of pulled pork in the refrigerator gives me the opportunity to fix any number of totally different but quickly prepared meals. There are so many variations of pulled pork recipes to pick from! My husband loves yellow rice and black beans, so I finally chose this Cuban Pulled Pork recipe that sparked my interest over at Latin Mom Meals. (I did tweak it just a little.) A 5 lb. pork shoulder goes a long way for two people but the meat is so versatile that we had no problem enjoying it in a variety of meals during the week. And the meat freezes well, so we have several freezer bags of pork to use in the near future for easy meals that I can throw together in a pinch.
After inserting slivers of garlic into the roast, marinate in a large ziplock bag in the refrigerator for 2-24 hours.
Place roast and marinade in the Instant Pot with a cup of water.
Pressure cook for 90 minutes and allow a 20 minute natural pressure release.
Pull meat apart and get ready to eat!
Cuban Pulled Pork Instant Pot
Ingredients
- 5 lbs pork shoulder
- 10 cloves garlic
- 3 tsp salt
- 3 tsp black pepper
- 2 tsp cumin
- 2 tbsp dried oregano
- 1/2 cup cider vinegar
- 4 tbsp lime juice (juice of 6 limes)
- 1 cup water
Instructions

Chop 6 cloves of garlic for the marinade. Sliver 4 cloves of garlic. Using a sharp knife, make random cuts into the pork roast and insert a sliver of garlic in each hole.

Place the pork roast in a large zip lock bag, in a large bowl, with all ingredients except water. Place in refrigerator and marinate 2-24 hours, turning occasionally for maximum flavor.

Place the water and marinated pork in the Instant Pot. Close lid and set valve to sealing. Set pressure cooking timer to 90 minutes. When time is up, allow a natural pressure release, about 20 minutes.

Remove pork from instant pot and shred with two forks. Add some liquid from the Instant Pot to the pork and serve.
Pulled pork with black beans and grits!
Pulled pork with barbecue sauce, baked beans, roasted potatoes, & slaw.
And pulled pork, yellow rice, and Cuban-style black beans!

My husband and I really enjoy pulled pork a lot. I buy a big pork loin and cut it into 3 sections for 3 different meals. There also, is only 2 of us and a small portion is plenty for us.
