Have It Your Way Seafood Casserole
It’s mid-summer and that means kids are out of school and moms are super busy. Even our blog has been quiet. But no matter how busy you are, dinner still has to be on the table every night one way or another. This Have It Your Way Seafood Casserole from Amy Dacyczyn’s Tightwad Gazette lets you put a dinner casserole together in a hurry using what you have on hand. The recipe works with chicken as easily as with seafood, too. Amy’s frugal tips and money-saving recipes were an inspiration to me when my kids were growing up and money was always tight. And my kids grew up on my tuna casserole based on Amy’s recipe.
Have It Your Way Seafood Casserole
Ingredients
- 4-5 ounces pasta
- 1/2 cup mayonnaise or salad dressing
- 1/2 cup milk or dry white wine I use white wine
- 1 can condensed cream soup
- 1 cup ( 4 ounces) shredded American cheese I use cheddar.
- 1/2 tsp dry mustard or dill
- 6-8 ounces drained canned seafood (shrimp, crab, tuna, or salmon) I use 2 cans tuna. You can also use canned chicken.
- crunchy topping I use French Fried Onions.
Instructions

Cook pasta according to package directions. Drain and set aside.

Combine mayonnaise with milk or white wine. Stir in soup, cheese, and seasonings. Gently stir in cooked pasta or noodles and drained fish or seafood.

Pour into a 1 1/2 qt. casserole dish. Cover and bake at 350 degrees for 30 minutes. Uncover and sprinkle with crunchy topping. Bake 5 minutes more. Makes 6 servings.
Serve your tasty casserole with a green salad or just a can of green beans if that’s all you have on hand. I have even tossed a handful of frozen peas in the mix to give it some color and avoid yet another dish to wash. With basic ingredients in your refrigerator and pantry, plus a little creativity, it becomes an easy task to pull together a satisfying one-dish family dinner!
This sounds delicious, I like that you can substitute chicken for people that don’t like seafood.

It sounds great, but I would probably cut back on the mayo, and actually substitute Drew’s Chipolte Ranch dressing instead. It is out of this world good and not too spicy at all!
This is a recipe that I know my family will love. Seafood is our favorite so this is on my list!
