Grilled Zucchini with Balsamic Basil Marinade
Summer is here and the grill is uncovered! We are enjoying the long evenings on the back deck along with some of the bounty from our little garden space. Every summer that bounty includes lots of zucchini and yellow squash. I love pulling my favorite summer recipes out of the recipe box and fixing the dishes my family loves every year!
Such a simple yet tasty marinade for our little zucchinis. Note the fresh basil – I’m always happy when I find a recipe that lets me use our summer basil plant.
Fresh-from-the-garden zucchini on the grill!
Grilled Zucchini with Balsamic Basil Marinade
Ingredients
- 1/4 cup Chopped fresh basil leaves
- 3 tbsp Balsamic vinegar
- 1 tbsp Dijon mustard
- 1 tsp Honey
- 3 cloves Garlic, minced
- 1/3 cup Olive oil, extra virgin
- 4 Zucchini cut into thick strips
- salt & pepper to taste
Instructions

In a small bowl, mix chopped basil, vinegar, mustard, honey, and garlic. Whisk together, blending in oil.

Marinate the zucchini strips in the balsamic basil sauce for at least an hour before grilling.

Place zucchini on a barbecue grill over a solid bed of medium coals or medium heat on a gas grill. Close lid on gas grill. Cook until brown on each side, turning as needed.

Add salt and pepper to taste.
