Grilled Veggie Skewers
Grilled Veggie Skewers are a tasty way to serve fresh summer vegetables. I used what I had in the refrigerator and added frozen corn (defrosted) since we had eaten up all the fresh corn already. You can mix it up with all kinds of different vegetables and add some chicken or other meats if you prefer. I had metal skewers but you can also use wooden ones that you have pre-soaked in water for 15-20 minutes so they don’t burn on the grill.
Grilled Veggie Skewers
Ingredients
- 2 ears of corn, husks removed
- 2 onions
- 1 zucchini
- 1 green or red bell pepper, seeded & cored
- 2 tbsp olive oil
- 1/4 cup chopped fresh basil leaves
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
Instructions

Preheat the grill to medium heat (350 – 450 degrees)

Cut the vegetables into chunks or slices. Thread them onto the skewers, alternating vegetables. Brush vegetables with the olive oil and sprinkle with basil, salt, & pepper.

Grill until tender and slightly charred, turning and basting occasionally with olive oil.
