Grilled Cheese with Caramelized Onion & Miso Butter
I love to try recipes that are not only new to us and not too complex but also combine complementary flavors in a unique way. This Grilled Cheese with Caramelized Onion & Miso Butter recipe from Umami Bomb by Raquel Pelzel is truly all that. I love grilled cheese and could die for caramelized onions but had never cooked with miso paste before. Put all three together and the result is an over-the-top version of the no longer humble grilled cheese sandwich.
The ingredients were pretty much every day staples. I just had to purchase the miso paste and I did spring for Gruyère cheese to stay authentic to the recipe.
- Butter
- Olive oil
- A yellow onion
- Kosher salt
- Rice vinegar
- Miso paste
- Wholegrain mustard
- Bread
- Gruyère cheese & Gouda cheese
No, these onions are not fully caramelized yet. But my kitchen smelled so good at this point!
Almost done! The miso paste is on the bread, topped with the cheeses (I used half Gruyère/half Gouda) and caramelized onions. The bottoms of the bread slices are spread with butter and the pan is hot. Just need to add that top layer of bread and we are about to have dinner!
Just look at that golden brown bread! The inside is full of melted cheese and yummy onions totally enhanced by the miso butter underneath.
Grilled Cheese with Caramelized Onion & Miso Paste
Ingredients
- 4 tbsp Unsalted butter room temperature
- 1 tbsp Extra virgin olive oil
- 1 large Yellow onion halved & sliced thin
- 1/2 tsp Kosher salt
- 1 tbsp Rice vinegar
- 1 heaping tbsp Miso paste – white
- 1 tbsp Wholegrain mustard
- 4 slices sandwich bread I used sourdough
- 1 cup Gruyère cheese or half Gruyère & half Gouda grated
Instructions

Melt 1 tbsp butter in a large non-stick skillet over med-high heat. Add the olive oil, onions, & salt. Cook until the onions are browned, about 10 minutes. Add the vinegar, turn off the heat, & transfer the onions to a small bowl. Do not wash the pan.

Mix 1 tbsp butter with the miso paste & mustard in a small bowl.

Spread two slices of bread with 1/2 tbsp butter each on one side and half of the miso butter each on the other side. Place the buttered side of each slice of bread in the skillet.

Divide the cheese & onion between each slice of bread on top of the miso paste.

Use the remaining butter to cover one side of the last 2 slices of bread and place them on top of the cheese & onion, buttered side out. Cook on med-low heat 4-5 minutes, until the bottom of the bread is golden brown. Do not press down with a spatula.

Flip the sandwiches over and brown the other side of the bread, 3-4 minutes more.

Serve with pickles – and a salad if you feel the need.

OMG this looks and sounds so good. Never have had caramelized onion on grilled cheese but I want to now. BUT I don’t have any ideal what MISO BUTTER is????
I am a grilled cheese junkie & I am absolutely swooning over this. I’ve also been wanting to incorporate using miso more often, so this will be PERFECT to try. Definitely saving this recipe! 😀
