Easy Peach Cake with Cream Cheese Frosting
I have been known to state that I am all about easy when it comes to cooking. That also extends to the baking part of food prep if at all possible. The food you fix for your family doesn’t have to be complex and time-consuming to be delicious. Sometimes a person does feel like taking on the challenge of a from-scratch, mega-multi-ingredient baking project. I think all of us who cook have looked at a difficult recipe and decided to give it a try, just for the feeling of accomplishment and the fun of putting it together. Easy Peach Cake with Cream Cheese Frosting
Ingredients
Ingredients for the Cake
- 1 box white cake mix
- 1 3.5 oz pkg instant peach gelatin
- 1 cup milk
- 5 eggs
- 2/3 cup butter melted
- 1 can sliced peaches drained, diced, save juice
Ingredients for the Frosting
- 1 8 oz pkg cream cheese room temperature
- 4 tbsp butter room temperature
- 1/2-1 cup powdered sugar
- 5 tbsp peach juice saved from can of peaches
Instructions

Preheat oven to 350 degrees

Mix together cake mix and dry gelatin in a mixing bowl

Using an electric mixer, mix in the milk and eggs - one egg at a time - then the melted butter. Continue mixing until the batter is smooth. Then gently fold in the drained peaches.

Pour into a 9x13-inch baking dish. Bake for 35 minutes, or until a toothpick inserted comes out clean.

Let the cake cool on the counter. When it is cool to the touch, spread the frosting over the top.

While your cake is cooling, make your frosting. Beat the room temperature butter & cream cheese together until smooth.

Add the sugar to taste - start with 1/2 cup.

For additional peach flavor, add in the reserved 4 tbsp peach juice or more peach gelatin.
This looks like it will be really good and not too hard to bake.
