Balsamic Cucumber & Onion Salad
When I have to come up with dinner for my family on a particularly busy day, I really love having a cold salad prepared ahead of time and waiting in the refrigerator. This Balsamic Cucumber & Onion Salad is so easy to put together and tastes even better after a few hours of letting the flavors meld together. You can make this the evening before and have it the next day as your dinner side salad.
Ingredients:
- 3 large or 4-5 small cucumbers (I used small Persian Cucumbers that are sweet and seedless)
- 1/2 red onion
- 1/4 cup sun dried tomatoes (I used the sun dried tomatoes in oil variety)
- 2 Tbsp sliced black olives
- 5 oz crumbled Feta cheese with Mediterranean herbs
- Creamy Balsamic Dressing (I used Briannas)
Directions:
Peel and then slice the cucumbers about 1/4 inch thin. Cut your onion into thin strips, then into bite size pieces. Add the sun dried tomatoes, black olives, and Feta cheese to the cukes and onions. Mix together with the Creamy Balsamic Dressing (I used about 1/2 bottle since my onion was rather sharp), and add a little salt and pepper (to taste). Eat right away or, even better, keep in the refrigerator for several hours before serving.
